With Christmas approaching and winter in full swing, the home care franchise recently shared a delicious recipe for carrot and red pepper soup on its website.

Heritage Healthcare is passionate about keeping people safe and warm throughout the colder months - and that’s exactly why the home care franchise just recently posted a recipe for a delicious and warming carrot and red pepper soup, perfect for chilly winter lunchtimes. With the temperatures dropping, there’s nothing better than a bowl of hot soup to warm you up, and Heritage Healthcare is ready to provide that warmth to its customers. For the recipe, the ingredients are:

  • 1 large white onion, chopped
  • 4 carrots, chopped
  • 1 red pepper, deseeded and chopped
  • 0.9l reduced-salt vegetable stock
  • 50g dried red lentils
  • 1 tsp ground ginger (optional)
  • 4 tbsp low-fat natural yoghurt
  • 1 pinch ground black pepper (optional)

 

The recipe is simple, and can be made in volume and kept in the fridge for three days (or the freezer for three months): Customers should “dissolve the stock cube in hot water” and then “place the carrots, onion, red peppers, lentils, ginger and dissolved stock in a large pan and “bring to boil”. When the stock starts bubbling, it’ll be time to “reduce the heat and simmer, partially covered, for 25 minutes until the vegetables and lentils are tender”. 

 

At this stage, customers should “take the pan off the heat” and “blend the vegetables using a liquidizer, food processor or hand-held stick blender until it is smooth”. The soup can then be served “with a tablespoon of natural yoghurt”, “a sprinkle of fresh chives” and a “warm crusty bread roll”.
