The unique and fast-growing coffee van franchise network is 100% in the Christmas spirit, and recently joyfully shared its best festive recipes via its blog.

In the words of Cafe2U, “When people in the UK think of Christmas, the first things that come to mind tend to be presents, brightly decorated trees and Santa. But without a doubt, one of the best things about the festive period is the food and drink - from pigs in blankets to Christmas pud and mulled wine.” That’s why the coffee van franchise took the time to share a few of its fave festive recipes with customers, such as:

  • Mince pie brownies - Melt butter and choc in a bowl, whisk eggs and sugar, add the whisked mix into the cooled butter and choc mix and “gently fold together using a figure of eight motion until the mixture is dark brown”. Then sift in cocoa and flour, spoon into tins, add whole mince pies to the middle and “pop in the oven for 25 minutes” to bake to perfection. There’s nothing better than an ooey-gooey brownie with a Christmassy touch during the most indulgent season of all.

  • Gingerbread stars - These can double as tree ornaments, and are “perfect for baking with kids”. Just heat butter, syrup and sugar in a pan until melted, then mix together bicarb of soda, ginger, cinnamon and flour. Pour in the butter, syrup and sugar when it’s cooled, and combine everything to form a dough. Roll it out, chill it, and then cut it into star shapes and bake for 10-12 mins. Mix icing sugar with a bit of water as the biscuits cool, and then decorate them with a piping bag for maximum advent amusement.

  • Eggnog latte - To make “this cheeky delight”, pour one part espresso into a large mug and then top with around one and a half parts steamed and whisked frothy milk. Then add a hearty helping of eggnog, followed by a final half part of milk, and sprinkle with “nutmeg and cinnamon to serve”.
