Jethro Lawrence has helped home delivery food franchise Wiltshire Farm Foods devise its summer menu.

Jethro Lawrence is one of eight top chefs from across the South West who are contributing to Wiltshire Farm Foods’ summer menu. When these chefs had to close the doors of their restaurants due to the coronavirus pandemic, Wiltshire Farm Foods decided to support those affected by developing the Summer Kitchen collaboration.

The head chef at the food and beverage franchise, Phil Rimmer, worked alongside the talented chefs to produce a range that would offer something for every taste and budget. Delighted to get involved, the chefs created their own delicious signature dishes. This included eight mains and three desserts. There are already a range of 300 meals available from Wiltshire Farm Foods, but now customers can look forward to the seasonal flavours of the new range.

Jethro Lawrence’s creation was a gammon in Somerset cider. The other dishes include Richard Knighting’s slow cooked lamb with minted peas and beans, Peter Vaughan’s slow cooked beef with onions and Dorset ale, Elliott Lidstone’s creamy chicken, pearl barley and cauliflower risotto and Simi Rezai-Ghaseemi’s chickpea and apricot stew.

To finish your meal on a sweet note, you can choose from a dessert range that offers a gooseberry Bakewell tart, a classic chocolate and cherry brownie with vanilla cream sauce and a date pudding with coconut and date sauce.

Peter commented:

“You were given a brief and it was very important to not go off what I call the traditional track, because a lot of people like their traditional food. But that one struck a chord with every chef who was working on their dishes and everybody thought the same. It’s the sort of dish your grandparents and your parents would enjoy – it tastes nutritious, it tastes light, it tastes like a treat.”
